PEANUT BUTTER AND OATS COOKIES🍪

Cookies are one of the most easiest baked treats. Honestly I was shocked to find out that it was as easy as it is to bake them. I started baking during quarantine in 2020 and I can for sure say that this is the best thing and the best result out of all my many many projects in the kitchen that kept me busy. 

The cookies are soft yet crunchy due to the combination of peanut butter and oats. You can use whichever peanut butter you see fit for your taste whether smooth, salted etc. Personally I went for smooth peanut butter. For the oats I personally prefer whole oats. Unaweza pata oats in any supermarket and the peanut butter can be homemade or the ones in the shops (for some reason I feel the need to say commercial peanut butter). 

The best recipe for a cold day when you just want to curl up and bite bite on something!



PREP TIME: 25 min         COOKING TIME: 15 min                12 PIECES.

INGREDIENTS.
60 g peanut butter

55 g unsalted butter

45 g of sugar

2 small eggs

1/4 teaspoon of baking powder

65 g wheat flour 

A pinch of salt to taste

1 teaspoon of vanilla Essence

1 1/2 packs of 30 g packs of whole oats

 
METHOD.
Mix your peanut butter, unsalted butter and sugar until fluffy. This may take 2 to 5 minutes depending on what you are working with. You can use a whisk or even a mwiko. As long as it gets the work done.

Add in your eggs one by one and beat until it is well mixed. Be careful not to over mix...mix for not more than 5 minutes. It should be creamy.

At this point add in your flour, baking powder and a pinch of salt for taste. I used brown flour. Note, a pinch of salt. Once those are mixed in well add your vanilla essence.

Finally pour in the oats and mix. The dough should not be too hard or to soft. For thicker cookies, chill the dough in the fridge for two hours up to overnight if you like. Make sure to cover with cling film or wet cloth. Today we are going for lighter cookies thus we'll go ahead to mould our cookie dough on the already greased baking pan. You can use cookie sheets instead.

Preheat the oven at 170 degrees for five minutes. And we are ready to go. Bake them for 10 minutes.

Serve preferably when they are already cool, with a glass of milk or any beverage of your choice.
